Today we shared our last meal with Bill, our brilliant helpful volunteer from CESO in Canada, who helped us to understand many issues of SEO and web marketing at a deeper level, and who positively lit up our days with his great sense of humor.
Here’s what we prepared for his delicious lunch (special thanks to my friend Clarissa who inspired this creation):
- Vegan Marrow and fungi bake:
5 cloves of garlic
1 big onion
1 green pepper
150 g mushrooms
150 oyster mushrooms
2 big tomatoes
Salt, pepper, paprika, oregano, thyme to season
Slice all the ingredients finely and mix them with the herbs and spices. Distribute the vegetables in a greased baking tray. Sprinkle a little olive oil on top. Bake at 250º centigrade or gas mark 5 for around 45 minutes or until soft. Serve with pressure cooked cocktail potatoes (5 minutes in the pressure cooker after you have turned down the heat) and olives.
2. Seasoned Chick Peas:
4 cloves of garlic
1 big onion
3 stalks of celery
Salt, pepper, paprika, bay leaf and tarragon to taste
A little water or broth from the chickpeas
Put a little olive oil in a saucepan and add all the finely sliced vegetables (except the chickpeas). Add the salt, bay leaf and spices stirring frequently. Add a little water and cook the veggies until slightly soft. Add the chickpeas and the tarragon to taste.
3) Exotic fruit Medley:
1 1/2 apples
100 g blueberries
1 prickly pear
The juice of one orange
A dash of Pisco to taste (optional)
Mix all the ingredients and serve.
